Saltrams Mamre Brook Cab. Sav. 1996.

The label said it would continue to improve for another 5 years. Some 7 years on from then, the wine is still showing great character. Perhaps not quite such an intense flavour explosion as I last remember when tasting this wine, it is very smooth and silky with all the black fruit flavours usually associated with South Australian cabernets. On the nose there are hints of spices and cigar box. Lovely long finish and very enjoyable.

I probably wouldn't leave the remaining bottles in the cellar for too much longer, the wine has probably started on the downward curve and should be enjoyed while all it's main attributes are still intact.
