Serafino - Cabernet Sauvignon 2000

A really smooth well integrated wine. The wine was matured in American and French oak, however the American oak shows more of a predominance with vanilla flavours still lingering. Hints of cherry as well. The wine slid down far too easily with a beef dish cooked in Italian style.

On the back label it said drink now (release was in about 2003) or 2007. It was a coincidence that this bottle was pulled exactly halfway through t2007, but proved to be right on the mark. If you have any in your cellar, enjoy it now, it will never be better!

Serafino is owned by Steve Maglieri who started the winery after selling Maglieri Estate to Mildara Blass.
